Delicious ramen noodles with crispy tofu, and oven baked bok Choy, mushrooms and shallots!

Recipe:
Sauce for Ramen Noodles:
Ramen Noodles:
1. Prepare noodles according to the package instructions.

Sauce ingredients for the noodles:
1. 1 boullion vegetable cube
2. 1 cup of vegetable stock or water.
3. 2 T of white miso paste.
4. 1 T of rice vinegar.
5. 1 tablespoon of garlic paste (I roast my garlic and then make a paste with lemon juice).
6. 1 tsp of salt.
7. 2 T of soy sauce.
8. Grate a bit of ginger.
9. Mix your ingredients together and then pour into your pot with your waiting noodles. Stir gently.
Tofu:
1. Drain your tofu as much as possible and then cut into squares.
2. Toss with corn starch, a bit of salt, and 1/2 tsp of garlic and onion powder.

Tofu Sauce:
1. 1/4 cup of soy sauce.
2. 2 tablespoons of water.
3. 2 tablespoons of maple syrup.
4. 1 tablespoon of rice vinegar.
5. 1 tsp of garlic paste.
6. 2 tsp of cornstarch.

Mix together in a glass. Pour over your tofu pieces waiting in the frying pan. The sauce thickens quickly!

Baked vegetables:
1. I used sliced mushrooms and shallots and bok choy. I mixed 3 T of olive oil with 1 tsp of garlic paste, salt to taste, pepper and some onion powder together and massaged it into my vegetables. I baked it for 15 minutes in the oven at 400F.

Assembly:
Place your noodles in a bowl, with your vegetables and your tofu. Mix together or organize it 🙂 Sprinkle some white sesame seeds over and green onion slices.
